On Saturday, 12 April 2025, join an extraordinary culinary experience at Mozaic Restaurant Gastronomique Ubud, set to host the one-night-only ‘Full Circle’ dinner. Welcoming Chef Aditya Mustika from Jakarta’s talk-of-the-town ESA Restaurant, he and Mozaic’s own Chef Blake Thornley will merge their two distinct approaches together promising a menu that tells more than just one story.

The six-course menu will showcase the personalities of both chefs and restaurants. On one side we have Mozaic, who have evolved their original ethos of ‘Indonesian ingredients in haute cuisine’ with experimental techniques that takes each ingredient to its limits; meanwhile, ESA Restaurant who are on a mission to define the ‘new Jakarta cuisine’, looking to push the boundaries of what defines the capital’s culinary identity. Behind these missions are the equally innovative chefs, Blake and Aditya, each serving up their story and skills to diners.

The ‘Full Circle’ dinner has envisioned as a reunion of past and present, the convergence of two journeys, a showcase of an evolution of flavours, influences and a pursuit for excellence.

The six-course menu is available for one night only at the Mozaic Dining Room, priced at IDR 1,600,000++ per person.
