Sitting 70 metres above sea level on the tip of Bali’s southern peninsula, Banyan Tree Ungasan presents an exclusive Mexican Wine Dinner with Chef José Manuel Morales from 24 – 27 October 2017.

With more than 19 years experiences at various restaurants and resorts in Mexico, this Executive Sous Chef of Banyan Tree Mayakoba has prepared a four-course set menu that will amaze diners with his signature authentic Mexican cuisine. His dishes are Mexican culinary masterpieces that reinterpret classic dishes and reflect the freshest of ingredients, and presentation.

The evening dinner will start off with a ‘Trilogy of ceviche, shrimp, fish and octopus’ as appetizer. The second course will highlight ‘Slow cooked lamb rack with mole sauce and roasted root vegetables’. The meal is complete with a ‘Hojarasca’ dessert – a ‘Tequila-marinated strawberry and mango with cinnamon crispy tortilla and raspberry ice cream’.

image005This gastronomic dining experience celebrates the perfect pairing of fine wine and gourmet cuisine beneath the island’s stunning skies. However, the true star of the show is the taste and perfect balance between wine and dish. Special events include access and insight into highly sought-after Hatten wines, cooking classes, and an exclusive Guest Chef Dinner with wine pairings.

 

Banyan Tree Ungasan will also prepare a special cooking class with Chef Morales for guests who want to learn authentic cooking styles from a few popular Mexico regions. Open to all, the set dinner will start from 18.30 – 22.30, pricing at IDR 1,200,000++ per person, while private afternoon cooking class is priced at IDR 500,000++ per person.
