This time, Salon Bali’s Executive Chef Nic Philip will be collaborating with Mozaic Restaurant Gastronomique’s award-winning Chef Chris Salans.

Deemed to please the discerning palates of guests with a new take on Balinese and Indonesian culinary heritage, the ninth edition of Purnama Dinner will accentuate Salon Bali’s signature modern twist on authentic Indonesian cuisine, elevated with the magic touch of Chris Salans’ creations by combining French modern cooking using local ingredients.
Chef Chris Salans is best known for his pioneering style of combining French contemporary cooking combined with Balinese flavours at Mozaic Restaurant Gastronomique and Spice by Chris Salans, but before that, he honed his skills through working at three Michellin-starred restaurants in France and the US. As one of the best and most renowned fine dining restaurants in Bali, Mozaic Restaurant Gastronomique is located in the heart of Ubud. Chef Chris Salans exceptionally merges the French modern cooking techniques and presentation with the local ingredients and distinct flavours of Indonesia, combining the usual and unusual flavours together.
He most recently received the honour of winning the MANITOWAC Restaurateur of the Year, while Mozaic Restaurant has won the “Best Asian Restaurant” award at the World Gourmet Summit in both 2016 and 2017.
Australian Chef Nic Philip has an extensive list of experiences in the world of luxury resorts in the Asia-Pacific region and at celebrated European dining destinations including London’s Michelin star Cove Club and Copenhagen’s famed Restaurant Taller. Chef Nic was also included in the Top Young Chefs of 2017 list in Singapore’s The Peak Magazine, and the Bali Bible’s Top 10 Chefs of Bali. At Salon Bali, Chef Nic brings a modern and innovative twist to Balinese cuisine, crafted using authentic Indonesian techniques and ingredients.
