The COMO Shambhala Cuisine offers salads, energising juices and blends, copious with living enzymes, vitamins and minerals. The restaurant also features an open-kitchen, allowing guests views of the chefs preparing the fresh dishes.
The carefully and meticulously crafted Sunday Brunch menu serves healthy yet divine cuisines, overseen by Balinese-born Executive Chef, Dewa Wijaya. The creative and innovative dishes offered include gingerbread hot cakes with lemon sauce, lobster dumplings, tiger prawn with borlotti bean, marinated lamb skewers, wagyu beef sliders, yellowfin tuna tataki with radishthe, and almond sorbet and ginger caramel. The colourful dishes, all nutritious and energising, is perfected using Balinese and Southeast Asian spices, made up of organic and locally sourced ingredients, utilising a great deal of raw fruits and vegetables, however, meat and fish are also available.
