Previously known for their Greek and Mediterannean inspired menu, Jungle Fish has taken a new turn with the introduction of their new Executive Chef Wuisan Chandra. Hailing from Pontianak in Kalimantan, Chef Wuisan studied hospitality in Sydney and has extensive experience in Australia, Japan and of course Indonesia.
With his new appointment, a new menu is of course customary, however Chef Wuisan did not want to ignore the history of venue’s menu – therefore he has endeavoured to blend Asian and Mediterranean flavours for a whole new experience of the palate. Focusing on organic and local produce – their rice, herbs and some vegetables are grown on site – he aims to please the new wave of healthy consumers. When you visit, make sure to try his favourite dishes: The Katafi Prawn starter, Marinated Lamb Rack main and the Espresso & Valrhona Chocolate soufflé to finish off with something sweet!
