Chef Lambon (I Gusti Made Sukadana) has taken over the culinary reins of Manisan Bali as the restaurant’s head chef. Passionate about honest food that is authentic and speaks to the senses, he is expected to put his own unique stamp on the menu of this elegant dining venue. A Manisan new highlight dish is the chef’s own version of Crispy Pork Knuckle served with local Balinese vegetables in spiced coconut dressing, sambal matah and potato croquette, a new version of the Ubud delicacy that will have diners coming back for more.
