Although the dining scene in Bali holds some truly magnificent venues- hosting Michelin star chefs, artistes de cuisine and wine cellars galore – at times one must gain new insight and inspiration from the rest of the world. Even for members of the Chaine des Rotisseurs, one of the world’s oldest and most prestigious food and wine appreciation groups, even just a soupçon of global flair and flavour is essential for experienced palates.

Enter Thurston Saulsman, a semi-retired lover of food, wine and adventure. He travels extensively, hoping to capture the unique essences of local culture and cuisine at each of his destinations. He knows that each society has something new and interesting to offer. So, after an evening of Cognac and cigars, Thurston and Firdaus Siddik, the Bailli Delegue et Membre de Magistral, decided that local Chaines should thus embark on such culinary journeys.

This was the birth of Bali Outré-Mer (Bali Overseas). The objective is to bring the local Chaine members on a cultural and food adventure in various and unusual parts of the world- still encompassing the Chaine principals of camaraderie of the table and enjoyment of fine foods.

The inaugural Bali Outré-Mer event was held in May 2014, bringing together 35 people from all over South East Asia to converge in Perth, Western Australia. All indulged in the delicacies of the famous Margaret River wine region. With 5 wine tastings and exquisitely prepared dishes held over 3 days, the event was truly a success. An opera performance featuring a local soprano was also part of the elegant festivities of the trip.

Future travel plans for Bali Outré-Mer include Yangon, capital of Myanmar, Agra in India and even possibilities of joining the bailliages in China to explore interesting cultural foods there.

The Bali bailliage of the Chaine des Rotisseurs meet every month, gathering to enjoy the island’s finest food and wine, amongst like-minded cuisine enthusiasts.
