Indy was kind enough to take a moment from her busy schedule to sit down with us so that we could ‘get to know her’ a little better…

Your life at the moment?
Well… I live life to the fullest! My professional role is Operational Director for PT Gaia Lotus. Lotus produces high end lifestyle and jewellery products and promotes them through dinners and exhibitions where international clients and royalty view the ever changing and exciting products. It is challenging but fun!

I was recently appointed the first Honorary Bali Consul for New Zealand. My task is to help bridge the two countries in terms of tourism and trade. New Zealand is one of the most beautiful countries in the world and I would like to take this opportunity to say thank you to Ambassador David Taylor for his trust in me.

One of my passions is food. So, being on the committee of the Chaine des Rotisseurs is most satisfying. Traveling around the world with my dear husband to enjoy the local and international cuisine has been truly memorable.

But of course the most important thing in life is my family; my beloved husband and children. Although I’m busy, I still cook almost every day for my family and when I have time I experiment with recipes and entertain my close and dear friends.

Why the Chaine?
Well my husband introduced me. He is the Bailli Delegue of Indonesia. With an inexperienced upbringing, fine dining was a mystery to me. I could not understand raw oysters for example… Now I can finish 2 dozen by myself! I have learned about wine by attending tastings in Bordeaux, Margaret River, and New Zealand. Even so, I still enjoy good street food or a local herbal drink! I am multi-cultured with multi-tastes.

Most memorable Chaine event?
The event that Chaine Indonesia hosted in October 2011; a 3-day Grand Chapitre in Yogyakarta. I represented the Chaine and also my home town, which I still love. For the first event, a welcome dinner at Prambanan temple, we presented the most well known food from around the area. Guests from all over the world tasted our local cuisine; noodles, crackers and local delicacies like pigeon, duck, sate, and much more. It was very well received.

The second day, we dined with the Sultan of Yogyakarta and the entire royal family. It was an unforgettable experience. The royal china, usually reserved for dignitaries, was brought out of storage accompanied by a special ceremony. It was just beyond words. Spectacular!

The last day was the most challenging to organize. There was a dinner at Borobudur Temple for 270 guests. The 8-course dinner was prepared on site under a tent. 3 chefs collaborated including Chef to the Stars Egidio Squillace from Perth, Iqbal Batubara the Chef of The Plataran. Together they presented Southern Italian Cuisine, and the beautiful Farah Quinn prepared delectable desserts. This was my proudest project. I worked for about 8 months creating this project and I thank all those who helped, especially Sande McKinlay.

Favourite holiday destination?
I live in a holiday destination. I have everything I need for a holiday; good food, beautiful scenery and lots of sun, beaches and green mountains. I find time to read, paint or potter in my garden. I am surrounded by my loved ones. It is truly paradise. I do have a favourite destination though, a place where I can be myself and become one with nature. The mountains of Jatiluwih is where I would like to spend more time, perhaps in another couple of years when my children are all grown up.

Favourite restaurant?
It’s getting more difficult! For Italian I like the simple Rustica where Mama Gina cooks in the kitchen. For French entrecote, we like to go to Lestari in Drupadi, for fusion fine-dining, I like Teatro and Mozaic, for Chinese, Bali Nikmat in Kuta. Local favourites are the babi guling Sari Kembar or ayam betutu Men Tempeh in Gilimanuk, or the yummy Crispy Duck Pak Slamet. There are so many more than I can mention here!

But for now, back to work.
