Within 48 hours of the invitation being circulated, this event was fully booked! 26 enthusiastic Chaine members eagerly responded. The opportunity to be hosted by the rising star of Bali cuisine, chef Mandif Warokka at his super exclusive restaurant Teatro Gastroteque was just irresistible! Since opening Teatro in the trendy Bali locality of Seminyak, Mandif has won several awards in Bali including Best Restauranteur 2013, Best Chef of the Year 2013, and most recently Best New Restaurant 2014.

Within 48 hours of the invitation being circulated, this event was fully booked! 26 enthusiastic Chaine members eagerly responded. The opportunity to be hosted by the rising star of Bali cuisine, chef Mandif Warokka at his super exclusive restaurant Teatro Gastroteque was just irresistible!

Since opening Teatro in the trendy Bali locality of Seminyak, Mandif has won several awards in Bali including Best Restauranteur 2013, Best Chef of the Year 2013, and most recently Best New Restaurant 2014.

Mandif’s international experience in world class restaurants including Abu Dhabi, Saudi Arabia, Dubai and then various stints as a guest chef in European restaurants, meant he could offer lucky Chaine guests a menu of ‘fine French dining with an Asian twist’.

First Entrée: Sweet Prawn Tartare

This dish was expertly served circular with a succulent layer of prawn combined with avocado and delicately flavoured with miso lime sauce and topped with black caviar. A Matua Valley 2012 Sauvignon Blanc from Marlborough New Zealand paired perfectly. The plate on which this course was served was an artistic piece in itself, resembling volcanic pebbles. Most aesthetically pleasing all round.

Second Entrée: Blackened Tuna ‘Toro’

Lightly seared tuna with house made relish, Shiso, oba tempura and fern leaf. Another triumph accentuated by the delicate fruits of the ‘Leeuwin Estate Art Series Riesling 2009 from Margaret River, Western Australia.

Lobster is always a favourite, and Chef Mandif’s version of Jimbaran Bay Lobster with Asparagus, Sea Grapes, Zuchini Blossoms, Lobster essence accompanied by a fish dumpling was particularly elegant and tasty. The Bogle Chardonnay 2012 from Clarksburg California USA certainly did the dish justice.

A sorbet of Mangosteen refreshed the palate and served to seduce the appetite for the further delights to come.

First Meat Course: Five Spiced Peking Duck Breast harmonised with Fennel, Granny Smith apple, Red Sorrel and Red Beet Emulsion.

This dish was colourful and delicious, and paired nicely with Amaux Lachaux Bourgogne Pino Fin 2010 from Burgundy, France.

The final meat course was melt-in-your-mouth Kagoshima Wagyu Beef simply partnered by Potatoes, Mushroom and delicate Thyme Jus. Such fine textured beef needed only simple accompaniment and proved delicious with 2010 Matteo Coreggia D’alba Val Dei Pretti from Piedmont Italy.

The Cheese Course: Fourme D’ambert accompanied by a Conference Pear Relish which was a mixture of several varieties of pear, roasted Walnut, White Port Jelly and croutons with a sparkling wine from Bordeaux France, Chateau Tayac Cuvee Nicolas. Sublime!

The final course was a daring combination of Foie Gras Sandwiched by Valrhona Chocolate. This unusual creation accompanied by strawberries from Bedugul (located in the mountain region of Bali) and Butterscotch with crispies served with Nieport Ruby Douro from Portugal was a fitting close to the evening.

Certificates of appreciation were presented to the Maestro Chef Mandif Warokka and his team; Dikah  who expertly headed the Service Team, Daniel, head of the Culinary Team and last but by no means least, Eko the sommelier who knowledgeably introduced the wines. Dikah, Daniel and Eko ably assisted Mandif and all were equally applauded for their contribution to the fabulous evening.

Thanks to all Council Members involved in creating such a wonderful and memorable culinary experience at Teatro Gastroteque.!
